Baking is amazing. I love it because it's edible science and I'm always learning something new.  I'm also vegan, so I've got that extra challenge of trying to convert certain things. I've learned a lot of tricks and stuff to help out with that. For example, flaxseed meal is a perfect sub for eggs, and when it comes to buttermilk you just need to add some lemon juice to your preferred non-dairy milk and in a few minutes you have "buttermilk". For Halloween I made red velvet cakes in a special cake tin that was in the shape of a skull. I gave it an uneven layering of frosting to make it look like rotting flesh.

@Jackie, that’s pretty freakin’ sick, yo! I’d loved to have eaten even a little bit of that cake XD

Thanks! The cake was super delicious and everyone loved it.

And yeah, I've learned a lot of cool stuff like that. Also, flaxseed is way cheaper than eggs. I can get 50 or more "eggs" from a 5 dollar bag.

For butter I use a vegan brand named Earthbalance. It tastes, feels, and cooks like butter. I love it.

Oh, another cool trick is when a recipe calls for whipped eggs. The juice in cans of garbanzo/chickpeas works exactly the same and you can't overbeat them, unlike egg whites. The only downside is it takes forever, about 30 min of constant beating in a mixture.

I'm glad I could give you some cool new info. I will say that they don't always taste or feel exactly like non vegan baked goods, but I have yet to have anyone dislike what I've cooked. I've even been able to help people with it. I have a friend who developed severe allergies to animal products. Come Christmas I made them vegan gingerbread men and it almost made them cry because they hadn't been able to have those cookies in over a decade. You may find it helpful to find vegan recipes online or buy a cookbook if you are having troubles or don't like how they are coming out. Not every recipe is good.
