just here to subscribe for now! I've been baking for a little while, and I like making desserts like chocolate eclairs and cookies! Chocolate eclairs are my favorite even though I've still never baked a batch that didn't deflate. I've been really meaning to make cream puffs, but haven't had the time. I suck at knowing when kneaded doughs are done with being kneaded and I suck at kneading in general, even with a dough hook.

 Aaaaah I absolutely love eclairs ! My favourite flavour is coffee. But chocolate is awesome too. Never tried to bake some but definitely on my list.

Sure! here's the recipe I usually use. You need :

Filling:

• 2 cups whole milk
• ▢1/2 vanilla bean split lengthwise
• ▢6 egg yolks
• ▢2/3 cup sugar
• ▢1/4 cup cornstarch
• ▢1 tbs cold unsalted butter
• Pastry Dough:

• 1 cup water
• ▢8 tbs 1 stick unsalted butter
• ▢1/2 tsp salt
• ▢1 1/2 tsp sugar
• ▢1 cup all-purpose flour
• ▢3 eggs plus 1 extra, if needed
• Egg wash:
  

• ▢1 egg
• ▢1 1/2 tsp water
• chocolate glaze:

• ▢1/2 cup heavy cream
• ▢4 oz semisweet chocolate coarsely chopped

i used gluten-free flour and lactaid with this recipe here.

it came out suuuuper dense and a bit crumbly but it's otherwise good!
