OP, you and I are in the exact same boat. The search is so frustrating, and I've gone spelunking too many times in old forum posts and that one kinda crappy google doc file for any game that may satisfy the "genetic breeding" game I see in my head, and it's so frustrating. I love playing that particular function of every game I play, but there's never enough of it.

I'm also super peeved that everytime I try to look into it again, Niche is the first thing that pops up. I refuse.

I think we're just in for waiting until someone finally makes something. It's hard to imagine a breeding sim without browser play, because the community is what really drives the breeding, trends, selling, etc, but I want someone to figure it out and make the damn game already!

Oh man, Petz! I had every single one through Petz 5. Now you have me itching to dig out my old Petz 5 and dig through my old external HD to see if I still have my pets that I carefully brought up through every game from Petz 2 to Petz 5 (I had the original Dogz and Catz, but I don't recall it letting you import your existing ones into Petz 2 the way games after that would).

It's fun, even if it eventually does get a bit dull later on. But apparently they're working to add more to it and bring that stuff to the PC version, so I am glad to own it outright (rather than dealing with the microtransactions on mobile) and see how it goes. :D

The Mane Quest is where I get all my good horse game information - their article on horse isle 3 is an especially good read I recommend, they kind of drag it through the mud lol

If you're looking for something Pokemon-esque, there's also Temtem.  Doesn't have breeding and all that, though.

In terms of non-browser games:

If you're alright with playing with human genetics (not advisable in real life, haha), Oreshika: Tainted Bloodlines is a must play. . You play as a clan whose members have been cursed to live only a few years (complete with rapid aging) and you play over multiple generations by marrying gods and other clans, and each member of your clan will be completely unique in terms of appearance, personality, and stats. You can do everything at your own pace, no waiting necessary. ...tragically it's only on Playstation Vita and Playstation TV and was never ported anywhere else, so I'm pretty sure you wouldn't be able to play it.

There's also Monster Rancher, a classic series about breeding monsters. There's no advanced genetics regarding appearance but you can make crossbreeds and they will inherit the traits and abilities of the parents. An enhanced port of the first two games is coming to Steam in December, so look out for it.

And of course The Sims lets you breed pets if you have the pets expansions.

I can recommend Niche for PC. It has simple genetics and is a bit more of a turn based strategy game, but you can make up lore for your "nichelings" as you go along, and although the graphics are fairly simple 3d models, it can be a lot of fun to see how far you get. There's hunting, gathering, breeding, and fighting to do in order to survive, and the different attributes actually help in different environments.

Another one is Creatures, which is a pretty old PC game that you can download for free. I had the simplified version of it on PS1 when it came out and it enthralled me as a child, haha. Apparently it was a very sophisticated simulation for the time. It involves hatching and teaching your "Norns" how to fend for themselves across generations, gently encouraging them to eat, breed, find medicinal plants, explore, and even learn to talk, through the use of a praise/scold system. There are a handful of different mutations and breeds/colour morphs. There's also a storyline you can follow and a few different games in the series, but you don't have to complete it if you don't want to. The only downside is that for me, personally, I found the PC version incredibly hard. The interface isn't user too user friendly, and my Norns kept eating poisonous plants or refusing to sleep lol.

OK, so after people mentioned it, I grabbed Rival Stars. I have played over 21 hours and can give a pretty good review at this point.

The good:
There's no limit on getting things done.  Stuff like gestation has a relatively short time period (1-20 minutes depending on horse level) that can be skipped with money.
You can collect and breed horses with increasingly better stats and racing preferences.
You can hire a jockey to do races for you so you're not sitting doing races for hours.
There are quests that lead you down a storyline toward a goal.
The graphics are pretty nice.
There is a nod to diversity with a gay or bi character and there are POC.
You can name horses from a huge pool of AI recognized words and hear the announcer say it during races.  Or you can put in a completely custom one.

The bad:
You can't interact with the horses in any meaningful way.  The only thing you can do with them outside of racing is meaningless running around your own land.
It's clearly designed for mobile and to make you watch ads and spend real money.  Those things do not exist in the PC version, but the model is still there.  You can earn all the money you need to bypass this stuff by racing, but it still stands out.
It gets annoying having to level up horses each time you buy or breed one.  It takes a lot of time and money, just like you'd expect from a mobile game.
The coats through breeding seem to be a little better than random. It's weirdly simplified and I have gotten weird face markings due to how the blaze overlaps with the overlay for no blaze.
It gets repetitive and no new mechanics are introduced to you after the first couple of levels.  After that it's just repeating the same stuff over and over.
It's expensive. It should be around $20 for it to be a reasonable value.

Verdict:
I enjoy it and will continue to play it.  It can definitely be better, but I'm not sure if you can expect it to improve. I would recommend grabbing it when it's on sale, if the price tag isn't too painful for you.

I played a lot of rival stars mobile version and I agree it's a really enjoyable game, I simply lost interest (What ADHD does to a mf).

I kind of wish there was a game out that was pretty much agriculture simulator. Breeding and managing livestock, handling economics, etc sounds like fun to me, but that might just be because I'm a farmer kid.
