I've been exploring only at night for the last two day and I didn't find a single cave encounter yet. :c I think rng encounters just kinda drop to make it feel more difficult/an accomplishment when you do it during this part of the event.

Came here to check if other people also experienced a significant drop in cave encounters and I'm glad I'm not the only one, though still a bit frustrated with how common they were before this quest. :/
Before I got the quest I found 1-2 consistently each full energy bar, now I only found 3 so far (2 of which didn't even lead me to the cave, because I got the option that the wisp disappears......)

The quest happened to coincide with summer, the nights are at their shortest. Which probably explains the drop in encounters, you won't find them as often if you explore constantly as they only show up for 30 mins at a time.
I personally have not seen any drop in the number of cave encounters I found during the night time. (In fact on the day the quest was given I found the encounter successfully 11 times and the disappearing option another 2-3 times). Remember that this is just RNG and luck. And since you're specifically looking for it you will feel like it shows up less. It doesn't mean the rate has changed, just some bad luck. If you want to increase your chances save your energy for night, don't explore as much during the day.
The story has a couple more days before it continues for everyone, don't worry if you don't get 5 cave encounters instantly.

Except I used to find multiple ones a day, and yet haven't seen a single one in three days now since taking the quest. Random RNG being against us or summer messing with rates, I can buy, but this isn't just an in-your-head thing. It is showing up less.

It's nice to know others have this problem too.
Still frustrating as hell though. Even if by some miracle I finally find a wisp I don't get the follow option anymore.

I'm aggravated at this point, it's effecting my ability to find LT. Day 5 and still haven't found enough caves. I hope I can even finish the story line.

Definitely file a modbox or bugbox ticket at this point, I'd say. Giving the players a challenge is good, but if it gets impossible to finish in time that's oughta be some bug.

If it helps, I finally found all my caves exploring on a new moon night (little black moon symbol next to weather). I burned all my energy regain items just to get that 5th cave. ....one day and part in the event later, I keep finding at least 2-3 a day again.

This part of the even undoubtedly still needs some fine-tuning.
