Since the roleplay is predicted to start Monday, do you think you could open the Character Sheets now? Just in case some people aren't online during the time of opening?

And is the whole competing thing just like.. if 2 people sign up for the same rank, you'll just have to decide which one would be a better fit, or is there more to it than that?

Yes, that is exactly what the competition-esque thing is! If more than one person signs up to be an alpha, beta, or herbalist, but a second person signs up to be the same rank (before the opening on Monday), then I will look at both of their roleplay examples and decide which one would possibly be a better fit for that rank!

Also, that is a good idea, to start the Character Sheets now... however, I will barely be on this weekend due to family things... I could possibly open them today but the characters would only be approved/disapproved randomly throughout the weekend..?

And that's okay! It's better to open them now and have random approvals or disapprovals than to have someone be late if they're competing. Because then if it opens on Monday, they wont have time to compete because the rank would have to be chosen before the roleplay begins. And it's just better for everyone, life wise.
