What happens if a wolf dies while doing a Role action? (scouting, hunting, foraging, making medicines, pupsitting, teaching)

Basically, it's as if they never were doing the action to begin with for most roles. I've had this happen a lot with my studs, which I keep as scouts, so it can be pretty annoying that the scouting progress doesn't go up as if they completed the scout (especially if they would have before the death rollover). Same with herbalists (so either foraging or mixing), and I imagine for hunting and teaching. Now, for pupsitting, that's where you have to be careful! The pupsitter dying rolls before death or injuries checks for pups, so let's say your high % pupsitter is sitting a low base survival % pup, that pup is at risk if the pupsitter dies while under their care.

If i get a mission to defeat a few animals that can also be a group opponent, do the group opponents count?

For the wolves with roles dying question: yes, it effectively cancels out. I wouldn't really call it that though, because I'm pretty sure hunts will still finish, but that would also be the only one that behaves that way (not 100% on that, as I usually retire my hunters to mentors before they die, so never experienced it).

As for battling groups: Groups should count. If it's the event quest, I know it did last year for that, and for normal quests they do too (though normal quests tend to be "defeat 1 of so and so type of enemy," I've never seen one for more than 1 of a specific enemy outside of event quests; groups I know count for more than one if you have a quest that says "defeat # opponents in battle", though I forget if they count as 2 or 3).

Well for starters, your lead doesn't die from hitting 0 HP ever. Your lead will only die when they hit 8 years old, or if you retire them earlier for the price.

As for the opponent and you both hitting 0 at once, I believe that is actually impossible. The mechanics as far as I know is to end the battle when either you or your opponent hit 0 HP, and one event will roll before the other (I don't remember if it's a default you hit first, or if that's based on your "initiative," i.e. the order in which you and your opponent go; pretty sure it's based on initiative as there are talent perks to effect initiative). If it were to happen (both hitting 0 HP), I'd honestly have to assume it's a bug based on how I'm fairly certain (I'll call it 95% sure) battling works.

Is there a way to unsort a wolf?

You mean move them out of the cave they're in? No. Once a wolf is sorted into a cave, they cannot be unsorted again. You can move them to a different cave, but you cannot make them "unsorted".
